Shakshuka




Shakshuka is a popular dish in many Arab countries, especially in North Africa and the Levant. It consists of eggs poached in a spicy tomato sauce with onions, peppers, garlic, and herbs. You can serve it with bread, cheese, or salad for a filling breakfast or lunch. Shakshuka is one of the favorite dishes of Omar and Ali, two 7yo boys who live in Dubai. Their mom, Fatima, says that they love to dip their bread in the sauce and enjoy the runny yolks.


To make shakshuka, you will need:


  • 4 eggs



  • 2 tablespoons of olive oil



  • 1 onion, chopped



  • 1 red bell pepper, chopped



  • 3 cloves of garlic, minced



  • 1 teaspoon of cumin



  • 1 teaspoon of paprika



  • Salt and pepper to taste



  • 2 cups of tomato sauce or puree



  • A handful of fresh parsley or cilantro, chopped



Here are the steps:


  • Heat the oil in a large skillet over medium-high heat. Add the onion and bell pepper and cook for about 15 minutes, stirring occasionally, until soft and golden.



  • Add the garlic, cumin, paprika, salt, and pepper and cook for another 5 minutes, stirring frequently.



  • Add the tomato sauce or puree and bring to a boil. Reduce the heat and simmer for about 10 minutes, until slightly thickened.



  • Make four wells in the sauce with a spoon and crack an egg into each one. Sprinkle some salt and pepper over the eggs.



  • Cover the skillet with a lid and cook for about 10 minutes, or until the eggs are cooked to your liking.



  • Sprinkle some parsley or cilantro over the shakshuka and serve hot with bread, cheese, or salad.
